1/2 cup butter, softened (do not substitute)
1 cup sugar
2 large eggs, slightly beaten
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup milk
1 2/3 cup sifted flour
1/2 cup pecans, chopped
1 lemon, finely grated rind only
Glaze
1/4 cup sugar
1 lemon, juiced
Directions
Cream the butter and sugar. Add in eggs and continue beating. Mix in the salt and baking powder until well blended. Add in milk. Blend. Blend in flour until well mixed. Add nuts and lemon rind.
Bake at 350F in a greased loaf pan for around 50 minutes depending on the size of your loaf pan. After removing from oven, glaze with the sugar/lemon mixture.

Oh, MIMI, all your recipes look so so good. I just spent 30 minutes, making copy of all on this page. Will go back thru time and pick up some more. I just wish more people knew of your blog. I am going to cook some of these great recipes and send more people over!!
Can't wait to try the apple dumplings....and I have a basket of Pink Lady apples we picked this week. Now, are you telling me that I need to peel, core and leave the apple whole while baking it in a dumpling crust??
